Sweet 'n' Spicy Chicken Stir-Fry


PREP 10 MIN COOK 15 MIN SERVES 6

1 lb boneless, skinless chicken breasts, cut in 1 inch pieces
1 Tbsp cooking oil
3 cups cut up mixed fresh vegetables (red and green bell peppers, baby carrots, mushrooms and snow peas)
1 garlic clove, minced
1/4 cup catalina salad dressing
2 Tbsp hoisin sauce
1/4 tsp crushed red pepper
2 cups hot cooked long grain white rice

1. Cook and stir chicken in hot oil in skillet on high heat 3 minutes.

2. Add vegetables and garlic; cook and stir 5 to 6 minutes or until chicken is lightly browned.

3. Stir in all remaining ingredients except rice; cook 2 minutes or until chicken is done and vegetables are crisp tener, stirring occasionally.
Serve over rice.
