PREP 5 MIN COOK 30 MINS SERVES 4
4 boneless skinless chicken breasts (about 1 1/2 lbs / 680g)
1/3 cup hoisin sauce
1/3 cup hickory-flavoured barbecue sauce
1 Tbsp freshly squeezed lemon juice
2 tsp grated ginerroot
1/2 tsp chili powder
1. Preheat oven to 400'F. Spray a medium casserole dish with cooking spray.
(The dish should be just large enough to hold the chicken breast in a single layer.)
2. Whisk together all remaining ingredients in a small bowl. Spoon sauce over chicken. Turn pieces to coat both sides with sauce. Bake, uncovered, for about 30 minutes, or until chicken is no longer pink in the center. Spoon sauce from bottom of pan over chicken and serve immediately.

Recipe Tip: You can substitute 12 boneless skinless chicken thighs for the chicken breasts (add 10 minutes to the cooking time).
