Tex-Mex Cobb Salad
Prep 15 min Cook - min Serves 8
1 (10 oz) package torn romaine lettuce
1 cup frozen corn, thawed
1 large tomato, chopped
1/2 of a 9 oz. pkg. of any Deli Fresh Shaved Smoked Turkey Breast, coarsely chopped
1 (15 oz) can no salt black beans, rinsed
1 cup 2% shredded sharp Cheddar cheese
1/2 cup chopped red onions
1/2 cup Light Ranch salad dressing
1/2 cup thick, chunky salsa
1. Cover a platter with lettuce and top with next 6 ingredents (corn, tomato, turkey, black beans, cheese, and onions).
2. Mix together the ressing and salsa. Drizzle over salad just before serving.

This was quick and easy. We had this as a supper summertime meal - would also be great as an afternoon salad!
