Honey-Spice Pork



PREP 5 MIN COOK  15 MIN SERVES 4

1 (9-ounce) package frozen Italian green beans
1 (10-ounce) package frozen corn kernels
2 1/2 tsp Cajun seasoning
1/4 tsp salt
1/8 tsp dried thyme
1 cup grape tomatoes, halved
4 (5-ounce) boneless pork chops, 3/4 inch think, trimmed
1/4 cup water
2 Tbsp honey


1. Combine the green beans, corn, 1/4 tsp of the Cajun seasoning, the salt, and thyme in a large microwavable bowl. Cover and microwave on High 3 minutes. Stir, then microwave on High until tender, about 2 minutes. Stir in the tomatoes and microwave until softened, about 1 minute longer. Set aside.

2. Meanwhile, sprinkle the pork chops with 2 tsp of the Cajun seasoning. Spray 1 large nonstick skillets with nonstick spray and set over medium-high heat. Add 4 chops to skillet and reduce the heat to medium. Cook until an instant-read thermometer inserted into the side of a chop registers 160'F for medium, about 4 minutes on each side. transfer the chops to a plate and keep warm.

3. Add the water, honey, and the remaining 1/4 tsp Cajun seasoning to the skillet. Cook, stirring to scrape up any brown bits from the bottom of the pan, until the pan sauce thickens slightly, about 2 minutes. Return chops to the skillet and turn to coat with the sauce. Serve with vegetables.

Great meal! 


My husband wasn't too fond of the tomatoes being mixed with the warm vegetables but I didn't mind it at all - actually like it. 


Obviously from the picture, you might have noticed some carrots - this is because instead of the package of frozen Italian green beans, I used a package of frozen carrots, yellow & green bean mix. Also I don't use my microwave when cooking meals (long story - old house) so I heated my vegetables stove-top style (boiled them in water and then drained water prior to adding any of the seasoning). 


Also my husband had a side-dish of mashed sweet potatoes - I included 1/4 cup of mashed sweet potatoes with 1/2 tsp of Becel butter/margarine and counted this as (1) pointsplus value.
