Microwave Deviled Chicken



PREP  5 MIN COOK  15 MIN SERVES 4

1/2 cup plain dried bread crumbs
1/4 tsp dried thyme
1/4 tsp salt
1/4 tsp black pepper
3 Tbsp Dijon mustard
1 tsp hot pepper sauce
1 tsp Worcestershire sauce
1 tsp honey
4 skinless chicken thighs (1 1/2 lb), trimmed


1. Spray a microwavable 2-quart shallow baking dish with nonstick spray.

2. Combine the bread crumbs, thyme, salt, and pepper on a sheet of wax paper. Combine the mustard, pepper sauce, Worcestershire sauce, and honey in a medium bowl; add the chicken and toss to coat evenly.
Coat the thighs one at a time, with the bread crumbs, pressing lightly so they adhere.
Place the chicken in the baking dish in a single layer and lightly spray with nonstick spray.

3. Cover the chicken with wax paper and microwave on High 8 minutes. Uncover and microwave on High until the chicken is cooked through, about 2 minutes longer. Let stand about 3 minutes before serving.

PER SERVING (1 CHICKEN THIGH): 251 CAL, 10 G FAT, 3 G SAT FAT, 0 G TRANS FAT, 69 MG CHOL, 609 MG SOD, 12 G CARB, 1 G FIB, 26 G PROT, 60 MG CALC.

This was amazing! 
I however modified the recipe a little - here's what I did...


I didn't use skinless chicken thighs, I used skinless, boneless chicken breast - cut in half.
I opted to bake the chicken instead of microwaving it, simply because... well my old house and it's power requirements won't allow me to cook in the microwave for extended periods were it requires too much heat... lol
Everything else stayed the same - and boy oh boy was this enjoyed by our family.
...so much so that the first time I made, I didn't even get a chance to take a picture - had to make the recipe a second time!! :-)
