Broccoli Bacon Salad
PREP 20 MIN COOK 0 MIN SERVES 6
1 clove garlic, minced
1/4 cup low-fat mayonnaise
1/4 cup reduced-fat sour cream
2 tsp cider vinegar
1 tsp sugar
4 cups finely chopped broccoli crowns
1 (8-ounce) can sliced water chestnuts, rinsed and chopped
3 slices cooked bacon, crumbled
3 Tbsp dried cranberries
Freshly ground pepper, to taste
Whisk garlic, mayonnaise, sour cream, vinegar and sugar in a large bowl.
Add broccoli, water chestnuts, bacon, cranberries and pepper; stir to coat with the dressing.
PER SERVING (1 CUP): 89 CAL, 4 G FAT 8 MG CHOL, 12 G CARB, 1 G SUGAR, 4 G PROT, 3 G FIBER, 200 MG SOD

Again another great recipe. I brought this to a pot-luck supper and it was a hit.
To save on time, I used "Real-Bacon Bits" from the package - instead of cooking bacon from scratch.
Saves on time and on kitchen clean-up!
